RESEARCH QUESTION

How well do curcumin and green tea extract, each at about 1000 ppm, slow the oxidation of sunflower oil over seven weeks of accelerated storage?

Scientific background

Sunflower oil is rich in polyunsaturated fats, which react with oxygen and turn rancid. Antioxidants slow this by interrupting the free-radical chain reaction. Storing oil warm speeds oxidation up, so weeks of accelerated storage stand in for a much longer shelf life.
